Bacalao salt cod is a favorite across Spain, and is enjoyed in dozens of ways depending on the region. Far south in Huelva a favorite way to serve cod is in tiny crispy fritters, about the size of a pancake. They are crunchy, savory and addictive! Perfect with a cool glass of white wine or chilled dry sherry.

These tortillitas are made by hand, with bacalao mixed into a light batter of wheat and garbanzo flour, plus onions and parsley. The tortillitas are quickly cooked in olive oil, then flash frozen, ready to be finished in your kitchen.

To bake, preheat oven to 400° F and cook for 8-9 minutes. To fry, heat a little olive oil in a pan and cook the tortillitas until they are hot and crispy. Enjoy an authentic flavor of Spain rarely found outside of Andalucia!

    "Absolutely delicious. I prepared them using the oven method according to the package which calls for turning them over and letting them bake for 8-9 minutes more. I also lined my pan with parchment. Quite a bit of oil comes out in the process so I drained them on a paper towel. Sprinkled with lime juice--crispy and, as Tienda says, "addictive". So glad that I ordered these!!"
