This full-flavored traditional Spanish ham is aged for 18 months in the mountains of Spain and known for its consistent quality. During the curing process the jamón undergoes a tasty transition as it sheds 20 to 40 percent of its weight - fat melting away and complex flavors and mild saltiness developing.

Because whole hams continue to cure until you cut into them, you can hang it in the basement for weeks before its first use — where it will only get better with time
