This grain was recently selected by NASA to feed astronauts on their long trips in space. And no wonder why: With it being naturally whole grain, 16% protein, and high in lysine, carbohydrates and minerals; the amaranto is an important part of a balanced and healthy diet. Served alone or with regular flour, this grain provides high amounts of energy and complete nutrition to any baked recipe. Toasted, the amaranto is the perfect cereal and you can mix it with honey, yogurt or milk for a full energy start to the day.

Amaranth Pudding

1 cup rice
2 cups hot water
1 cup milk
1 can condensed milk
1 cup amaranth
1/2 cup raisins
1/2 cup sugar
ground cinnamon
2 cloves

Soak the rice in warm water for 15 minutes. Drain and rinse. Put the rice on a pot and add the two cups of water and cook for 10 minutes. Once the rice is done, add the milk, condensed milk, amaranth, sugar and raisins. Mix all well. Cover and keep coking for another 15 minutes, stirring constantly until the mixture thickens. Let it cool and sprinkle with cinnamon before serving. Serves 6.
