Casa Eceiza has made these famous cookies in Tolosa since 1924 when Luís María Eceiza created them in his Pastelería Eceiza pastry shop. As word spread across the Basque region of this exceptional cookie, Eceiza opened a small factory. To this day the same recipe is used to make this classic sweet.
Our favorite part of the cookie is the browned edges, where the sugar is slightly caramelized lending each bite a scrumptious level of flavor.
