This all natural sauce is the perfect compliment to grilled vegetables, meats or fish. In Catalunya they prize a unique onion called a 'calcot'. This young tender onion, which looks somewhat like a leek, is grilled over a wood fire until the outside is charred. They are then peeled and dipped in rich, nutty romesco sauce.
