Tiny baby artichokes are carefully cooked, then peeled by hand to reveal these delicious "artichoke pearls." Each heart is delicate and tender, with no chewy leaves. We enjoy them chilled with a drizzle of extra virgin olive oil, or gently heated with slices of Serrano ham.
During our visits to Navarra we learned about the famous vegetables of this fertile valley. These artichoke hearts were among our favorites, delicate and mild but with the perfect artichoke flavor. Because they are harvested when they are so small, production is very limited, and we sell out of them every year.
