From Navarra, a region known for its outstanding array of produce, this artisan Spanish pisto is made with fresh tomatoes, zucchini, onion, eggplant and piquillo peppers. The finely chopped vegetables are slowly cooked with olive oil to allow the natural flavors to mingle and meld into a dish with a stew-like texture perfect for a variety of recipes.

Although it originated in Castilla la Mancha, pisto is now a favorite throughout Spain. This thick and chunky pisto is vibrant and complex. Sometimes we just open up the jar and dip into it just as it is! It's fantastic with bread or crackers, tapas or any recipe that usually calls for a rich flavorful tomato sauce. Similar to ratatouille, it can be used as a filling for empanadillas or savory crepes or even as a pasta sauce.
