Next is a jar of sea salt with red wine and spices. Hand-harvested near the Bay of Càdiz by a fourth-generation salt farmer, this salt is a secret weapon in the kitchen. Our Pinchitos Kabab spice also works its magic with meat, a blend of herbs and spices that has been part of Andalucian cooking for nearly 1500 years. Pimentón de la Vera, or smoked paprika, is ubiquitous in the Spanish kitchen. Our version is from La Dalia, the finest producer of the spice. This artisan smokes fresh peppers for fifteen days over local oak logs, drawing out intensely smoky flavor and deep red color. Pimentón adds bold flavor to everything from paella, stews, grilled meats and even deviled eggs!
