From the coast of Chile come these incredible caracols. These small sea conchs are harvested by hand from the Pacific ocean. They are carefully cleaned in salt water, then cooked with great care in a seawater bath.
The result is a flavor straight from the sea. The caracols are tender with a good bite and have a flavor not very different from clams.
These sea conchs are great on salads or mixed with chopped vegetables and lemon juice. Excellent on pasta.
